Want to learn how to make chocolate or just have fun with it? Then, come join us in our kitchen and chocolate shop in Bonane, just ten miles from the beautiful town of Kenmare in County Kerry.

Our courses are run by Benoit Lorge, a French Master Chocolatier, who set up business in the Southwest of Ireland over 11 years ago. They are designed to suit absolute beginners, amateurs and professionals alike. As classes are limited to 4 people per class, this allows for a very hands on experience, which makes this course an ideal way to learn the art of chocolate making as a hobby, for fun or as a career choice going forward. We combine theory, practical study and chocolate tastings only using Valrhona Chocolate. Booking in advance is essential.

Advanced Chocolate oursesBeginner Chocolate Course – 1 Day

Duration: 9:30am – 5:00pm

Cost: €180, including lunch   

This is an ideal course to learn the basics of chocolate making

  • History and understanding of chocolate and cocoa beans
  • Working techniques and recipes
  • Tempering chocolate on a marble slab
  • Confections of different fillings (ganache)
  • Moulding and dipping of chocolate bonbons
  • Confections of truffles
  • Chocolate Mousse
  • Techniques of piping
  • Chocolate Bars
  • Chocolate Tastings

Advanced Chocolate Course – 2 Day Course   

Duration: 9:30am – 5:00pm

Cost: €330, including lunch on both days

This course is specially designed for those who want to learn the art of chocolate making with the view to starting their own business, for those who want to improve their skills, for the Pastry Chef who wants to enhance their “petit fours” selection or for anyone who would regard themselves as a chocoholic!! Maximum 4 people per class

This course covers all the techniques of the “1 day beginner course”, plus:

  • Chocolate Mousse
  • Techniques of framing and using a chocolate guitar to cut interior
  • Coating by hand with a chocolate dipping fork and use of the enrobing machine (if required)
  • Preparation and making of chocolate figures
  • Different finishing and decorations of chocolate bonbons
  • HACCP regulations, hygiene and safety
  • Where to purchase raw materials and equipment required for chocolate making
  • Moulding, using a tempering machine

advanced-courses-2PRO CHOCOLATE COURSE: START YOUR OWN BUSINESS – 4 DAYS

Duration: Saturday 14th May – Tuesday 17th May

Cost: €900

Perfect course for starting your business from scratch to finish,also for those who have completed the 2 day course. This course will enable students to increase their recipe range, organise their kitchen and choose perfect equipment. Will also include marketing strategies for future businesses.

We remind you that we take a maximum of 4 people per class. We always try to match students of same levels and expectations, so the course content can be modified on the day to achieve all expected objectives.
